Phil WebThe issue, of course, is that the gelatinization temp of rice and wild rice exceeds mash temp like for maize/corn, unlike for barley, wheat, and oats. So it needs to be cooked in advance. The BYO is talking about an American cereal mash. IMO it is not necessary. I didn't use rice flakes and rice in a side-by-side comparison.
